Grounding Stir Fry Recipe

Hey foodie friends,

Thanks for the great response on last week’s Wholesome 15 Minute Meals.

This week I’m bringing you a grounding stir fry. As an enthusiastic student of the metaphysical world, I’ll say I dedicate a lot of time to gaining more wisdom and knowledge about how foods play a role energetically in our health and wellness. Bear with me while I go a lil’ off tangent.

With the huge energetic shifts that are going on in our world and everything moving into a higher level vibration, many people are feeling unsafe, lost, fragmented, out of touch. A lot of seekers (people who have decided to step up and live their dreams) are also emerging to pursue their passions, and that brings forth a sense of fear around being accepted by family, friends, community. I know how it feels because I used to be there!

This is where grounding foods come in! Grounding foods nourish our root chakra and include root vegetables, red coloured foods, minerals, and protein. When we have a balanced root chakra, we feel safe, protected, and supported in our environment.

Lately, I’ve been intuitively guided to adding more grounding foods into my diet. With my biz + coaching picking up at a rapid pace, paired with the energetic shifts, I know it’s important to ground in order to sail through these times and expand with ease and grace.

Okay! Enough of my inner nerd talking about metaphysics.

Let’s talk about the recipe now! Yay!!!

Grounding Stir Fry Recipe

Ingredients

1 bunch Long beans

1 handful Mushrooms

1 segment of Lotus root

Garlic

Onions

Optionial: Tomatoes, Seaweed

Sea salt (to taste)

Sesame seeds

Brown rice

Now…

1. Cook brown rice in rice cooker or pot.

2. While waiting, slice long beans, mushrooms, garlic, onions, lotus root.

3. In a wok, place about 1/4 cup of water, garlic, onion and boil.

4. When boiling, add lotus root and boil till slightly soft. Add beans and stir-fry till a little soft and then add mushrooms.

5. On a plate, scoop your desired amount of brown rice. Top with sesame seeds and serve with your stir fry!

6. You may also slice tomatoes and add some seaweed to really give it a huge punch of flavours and yums.

Wholesome 15 Minute Meals Mastery

I’ve been requests for me to post up more healthy, simple, and fast recipes on the blog. To be completely honest, I had no idea that you were hoping to get more recipes! So thank you for letting me know! Enter… 15 minute meals.

When my cousins came over for Switch Off Sunday last weekend, they were all vibrant and excited to learn how to prepare and cook with me! And that’s when I suddenly realized that my no sweat, effortless and easy-to-assemble style of cooking healthily is probably one of my greatest skills! Wowza!

15 Minute Meals

My way of cooking is pretty much straightforward and requires almost no time at all. 

I came up with 15 minute meals because on a day-to-day basis, between many commitments and to-dos, I still prioritize eating healthy and feeling vibrant + alive. Health = Yes. Practicality amped up to the maximum.

Without further ado, here are the two wholesome meals we whipped up that only took less than 15 minutes.

1. Baked & Spiced Japanese pumpkin

This was A HIT.

Everyone loves a good baked pumpkin or sweet potato! Super simple, fuss-free. Here’s how you can blow the socks off your party guests without even breaking a sweat!

Ingredients

Pumpkin

5-8 Tbs Coconut Oil

Itallian Herbs

Sea Salt (to taste)

Now…

1. Peel pumpkin if not organic and remove seeds with a spoon or scoop.

2. Cut pumpkin into cubes. (No, it doesn’t have to be perfectly even sized – yay!)

3. On a baking tray, grease with 2 Tbs of coconut oil, add pumpkin, and add the rest of coconut oil to cover pumpkin cubes.

4. Sprinkle (generously) Itallian herbs.

5. Bake at 200 degrees Celcius for 50 minutes or until soft and cooked through.

6. Remove baking tray from oven and add sea salt to taste.

7. Enjoy!

2. Oil-free Vegetable Medley

This is great if you’re trying to reduce oil in your diet for weight loss or other reasons. I like to cook my veggies like this because it really packs the flavours of every single ingredient. (It also looks like a rainbow and tastes like a party!)

Ingredients

4 Tomatoes

1 Onion

Mushrooms (I like to use a variety of Swiss, Field, and Korean mushrooms)

Other veggies you adore (Asparagus, Eggplant, Broccoli)

Itallian herbs

Sea Salt (to taste)

Now…

1. Slice tomatoes, mushrooms, asparagus and broccoli.

2. In a baking tray or glass pot, fill the bottom of the pot with at least 2 layers of tomatoes and mushrooms.

3. Add other veggies above, and then Itallian herbs.

4. Cover the pot with foil or with the glass cover.

5. Pop into the oven for 40 minutes.

6. When the time rings, remove from oven and add sea salt to taste.

7. Enjoy!

 

As you can see, eating delicious and healthy meals is super simple! You only need fresh produce, an oven, and herbs! Prepping takes about 10-15 minutes, and after you pop it into the oven you’re good until the timer rings.

Result = An oven-fresh hearty meal

Total time required to prepare all = less than 15 minutes!

How to Whip Up A Superfood Smoothie

Today, I come to you with a recipe for my superfood smoothie. Ever since we got our Vitamix, green smoothies have been our best concoction to glow and shine from the inside out. In this video, I talk about the basics of our green smoothies, as well as two of my favourite superfoods to add to give it a (super-power and nutrition) boost!

It’s also no secret that green drinks have been deemed blood builders and healing tonics. They are so alkalizing, cleansing, nourishing every cell in our body. You know – I really believe that food is medicine, health is the natural state of being, and greens are our protectors and guardians against dis-eases and illnesses. We want to incorporate as much greens as we can, – and smoothies are a great way to do this.

Raw Chocolate Spread

Hello lovely people! Here’s a recipe for a delicious raw chocolate spread I have been thoroughly enjoying lately.

Raw Chocolate Spread

  • 1 teaspoon coconut butter
  • 1 teaspoon raw cacao powder
  • 1/2 teaspoon raw honey or maple syrup

What next?

1. Mix in a bowl and spread on toast, crepe, or for a quick option – on a wrap (I love Old Time Bakery’s!)

2. Assemble with slice bananas.

3. Enjoy! :)
