Hello lovely people! Here’s a recipe for a delicious raw chocolate spread I have been thoroughly enjoying lately.

Raw Chocolate Spread

  • 1 teaspoon coconut butter
  • 1 teaspoon raw cacao powder
  • 1/2 teaspoon raw honey or maple syrup

What next?

1. Mix in a bowl and spread on toast, crepe, or for a quick option – on a wrap (I love Old Time Bakery’s!)

2. Assemble with slice bananas.

3. Enjoy! :)

Raw Organic Dark Chocolate Recipe

This is my all time favourite treat to whip up. It’s so simple, and you can literally enjoy delicious, raw, organic, healthy dark chocolate in less than 30 minutes. They go really quickly in our household too – so I promise you that it really does taste amazing.

Here’s my super simple raw organic dark chocolate recipe! Happy chocolate making!

Ingredients

1/2 cup virgin coconut oil

1/2 cup raw organic cacao

3 whole Medjool dates

Ice cube tray

*Optional: Sprouted nuts, goji berries, coconut flake – or anything you fancy to spice your choccie up!

Directions

1. Warm coconut oil so that it is liquid. I do this by putting the jar in a tub of lukewarm water.

2. Soak dates and remove pit.

3. Slice dates thinly and as small as possible.

4. In your ice cube tray, place in sprouted nuts. I like to put two sprouted nuts in each cube!

5. In a bowl, mix all other ingredients till well combined and scoop/pour mixture into ice cube trays.

6. Place in freezer for at least 20 minutes. Voila!!!

Super Green Raw Vegan Sheezecake

I just made this raw ‘cheesecake’, which is dairy-free, sugar-free, gluten-free! So good for you and so so yummy. I made a similar version with a lemon ‘cheese‘, but this time I decided to go all superfoodie and added green powders (high in chlorophyll) and maca (great for sustainable energy and performance) to it. Turned out AMAZING. :) Enjoy!

Ingredients

Base

3 dates

2 Tbs shredded coconut (+ extra for covering cake pan base)

2 cups activated walnuts and almonds

Topping

1/2 cup unrefined coconut oil

1/2 cup water

1 cup activated cashews

1/4 cup honey (or maple syrup)

3 Tbs Green powder (Spirulina, Chorella, Wheatgrass mix)

1 Tbs Raw cacao powder

1 tsp Maca powder

 

Directions

Base

1. Combine all ingredients in a high-speed blender or Vitamix, and blend till combined.

2. Spread shredded coconut on base of cake pan – this makes removing the cake slices MUCH easier! ;)

3. Spread a layer of base evenly on cake pan.

4. Place in freezer to set. (About 2-3 hours)

 

Topping

1. Add all ingredients in a high speed blender or Vitamix, and blend till well-combined.

2. Take out base from freezer. Spread topping evenly.

3. Place in refrigerator to allow it to set. (About 1 hour)

4. Slice and enjoy!

Raw Lemon Cheesecake

I love raw cheesecakes as a treat because they are actually a dessert and snack that is GOOD for you. I love raw food, as it preserves the enzymes that heating food may destroy. And none of that acid or mucus-forming dairy, processed sugar or butter  in this cake! This cheesecake is actually filled with good for you ingredients that will boost your metabolism and satisfy your sweet tooth!

Crust ingredients

  • 1 1/2 cups almonds (sprouted overnight, rinsed and dried)
  • 1/2 cup dates
  • 1/4 cup desiccated coconut
  • 1 pinch sea salt

To make crust: Combine all ingredients in a food processor/Vitamix and blend till smooth. Press into a cake pan.

Cheesecake filling ingredients

  • 3 cups cashews (sprouted overnight and rinsed)
  • 3/4 cup lemon juice
  • 1/2 cup honey
  • 3/4 cup extra virgin coconut oil
  • 1 Tbs vanilla
  • 1/4 cup filtered water

To make filling: Combine all ingredients and blend till smooth. Pour over crust. Place in the freezer for an hour. And defrost cheesecake in the fridge for 2 hours before serving.

The secret is to freeze it and then defrost before serving. I was once too ambitious and tried to make everything in the morning (wanted to serve it for at an afternoon gathering) and the cake did not set in time!! (We had it for dinner instead :)
