I love raw cheesecakes as a treat because they are actually a dessert and snack that is GOOD for you. I love raw food, as it preserves the enzymes that heating food may destroy. And none of that acid or mucus-forming dairy, processed sugar or butter in this cake! This cheesecake is actually filled with good for you ingredients that will boost your metabolism and satisfy your sweet tooth!
- 1 1/2 cups almonds (sprouted overnight, rinsed and dried)
- 1/2 cup dates
- 1/4 cup desiccated coconut
- 1 pinch sea salt
To make crust: Combine all ingredients in a food processor/Vitamix and blend till smooth. Press into a cake pan.
Cheesecake filling ingredients
- 3 cups cashews (sprouted overnight and rinsed)
- 3/4 cup lemon juice
- 1/2 cup honey
- 3/4 cup extra virgin coconut oil
- 1 Tbs vanilla
- 1/4 cup filtered water
To make filling: Combine all ingredients and blend till smooth. Pour over crust. Place in the freezer for an hour. And defrost cheesecake in the fridge for 2 hours before serving.
The secret is to freeze it and then defrost before serving. I was once too ambitious and tried to make everything in the morning (wanted to serve it for at an afternoon gathering) and the cake did not set in time!! (We had it for dinner instead :)
