I have to admit it – I was never a veggie-stick kind of person. Celery sticks and carrot sticks as snacks didn’t appeal to me very much. But I’m proud to say that I’m officially on board the carrot train – yay! Still haven’t gotten onboard the celery stick train – I enjoy them in my daily morning green smoothie instead.
I was actually shocked by how good carrot sticks tasted when I had them organic carrot sticks with Candice’s curried pea and walnut dip – it was SO DELICIOUS.
I have since experimented with making my own dips with carrot sticks, cucumber and peppers! Life changing!!
Here’s one of my favourite dips, a Raw Zucchini Dip. It’s refreshing and zesty, and very light!
1 Tbs nutritional yeast
3 Tbs tahini
1/2 cup freshly squeezed lemon juice
High quality sea salt (to taste)
1. Blend all ingredients in a high speed blender or food processor till smooth.
2. Enjoy as a dip, on salads or as an appetizer!
